Glen Tinsley, Executive Chef

Executive Chef Glen Tinsley’s soulful cooking style has quickly gained a following at Ottimista since taking over the kitchen in November 2008.

A graduate from the Culinary Academy of California in San Francisco, Glen, native of Orange County, California, has worked up and down the state, honing his skills at restaurants including Fly Trap in San Francisco, Joe’s Restaurant in Venice Beach, where he helped the restaurant earn a Michelin star, and most recently AKA Bistro in St. Helena.

At Ottimista, Tinsley creates seasonal Italian-inspired menus with an eye for wine, based on local produce, heritage meats, sustainable seafood, and Italian traditions. He credits relationships with local purveyors such as King of Mushrooms, Marin Sun Farms and Ports Seafood, as well as San Franisco’s incredible farmers markets, for providing him with the ingredients that inspire his gutsy, flavorful menus.
